Today we are tasting «Soleras Olvidadas Amontillado 5.4.1», produced by Rolland Galarreta (artisanal selection of Michel Rolland & Javier Galarreta) under the DO Jerez-Xéres-Sherry and Manzanilla de Sanlúcar. It is made from aged Listán Blanco butts from the historic Cascos Bodeguero San León, Santa Ana and Miraflores from 1822 and 1740 in Sanlúcar de Barrameda (Cádiz).
In the visual phase of the tasting is a wine that leaves us in glass stop a very bright cobra heat. It is a very colorful wine whose reflections range between topaz and amber. It has very good density and is clean and bright.
The nose has a high aromatic intensity, with a predominance of spices, aromas of old wood and dried fruits. Its bouquet is subtle and delicate, with a very oxidative base softened by the aromas of hazelnut and herbaceous aromas mentioned above; the finish is reminiscent of aromatic herbs and dark tobacco.
The palate has a powerful entry, saline and very dry. It is enveloping and very persistent. On the tongue it is light and smooth, with well-balanced acidity, giving way to a sharp finish and persistent aftertaste, with hints of nuts and wood.
As a pairing suggestion, this amontillado has enormous pairing potential, as its dry and intense flavor adapts to difficult and risky pairings. It is a fascinating product to pair with vegetables, truffles or mushrooms, and excellent with smoked chicken or artichokes.
