Good morning readers, today we are going to taste and detail a manzanilla from Sanlúcar de Barrameda. It is none other than the illustrious “Manzanilla La Aurora“, from Yuste wineries.

Visual phase: this manzanilla surprises us with a nice straw yellow color with golden glints. It has a very good density, with an outstanding brilliance and limpidity.

Olfactory phase: we are talking about a product with an extreme olfactory intensity, being also complex and deep. It has a marked profile of green almonds, saline notes and a mineral (chalk) and autolytic (yeast) touch.

Tasting phase: it has a sharp and long entry. It is very tasty and stimulating. A marked drying profile is felt, with an acidity and salinity that translate into freshness in the mouth. The retronasal is clearly dominated by dried fruits and the aftertaste is long and very pleasant.

It is an extremely complex and “enjoyable” product. Its versatility makes it ideal to be enjoyed quietly for a long time, stopping to find all the hidden notes it contains, as well as to accompany a light “tapas”, a dessert, or even a spicy stew.

A manzanilla that after its tasting deserves the qualification of Excellent, reaching a score of 93+ points.
