Today we taste the wine Pedro Ximénez Selección de J.Martínez from Bodegas El Gato, from Rota (Cádiz). It is a single varietal “Vino de licor”. It has a gold medal in the CINVE 2020 awards. It is served in Bordeaux bottle and comes out with 17.5º.
In the visual phase we can find a caramel colored wine with mahogany trim. It has a particularly dense and persistent tear, which gives a very good sensation of density. It is very clean and bright.
In the olfactory phase we find a medium intensity, very frank. It has a marked profile of dates, dried apricots, honey, caramel and licorice. It becomes very elegant and interesting for its more hidden background aromas.
In the taste phase we detect a tasty and pleasant entry. Its passage through the tongue is especially silky and warm. It has a retronasal with a clear predominance of memories of raisins. The aftertaste is long and pleasant.
Pairing: It works especially well as an aperitif and dessert, although for the more exotic palates it can be a good choice as an accompaniment to spicy blue cheeses.
It is advisable to serve at a temperature between 5 and 7ºC, in a catavinos or sauternes glass. There is no need to wait for a long oxygenation time.
A wine that after tasting deserves the qualification of Very Good, reaching a score of 90 points.
