Templum

Templum, Moscato di Terracina DOC Amabile, is produced by the family winery Cantina Sant’Andrea, whose roots go back to 1850. The Pandolfo family has always produced wines and today the fifth generation continues that tradition.

The vineyards, production facilities and winery shop are located in Borgo Vodice, in the province of Latina, in Lazio. This region, formerly marshland reclaimed from the sea in 1932, extends towards Campania following the Tyrrhenian coast southward to Monte Circeo. Belonging to the Pandolfo family, who cultivate these lands with absolute dedication, this winery has written a very important chapter in the wine history of this place.

Templum is the result of a very slow fermentation of the most typical grapes of the territory, picked one by one into small baskets to preserve their ideal sweetness. It is a sweet wine produced exclusively from Moscato di Terracina grapes, a product of gentle flavour and perfect for pairing with a wide variety of dishes.

The Moscato di Terracina grapes are grown in the Terracina area, in the province of Latina, on soils rich in red clays, between 7 and 12 kilometres from the Tyrrhenian Sea. The harvest takes place during the first ten days of October, with vineyard selection and manual harvesting of slightly overripe bunches, thus enriched in aromas and sugars. In the winery, after crushing and destemming, the must undergoes a brief cold maceration followed by alcoholic fermentation at controlled temperature. Once the appropriate sugar level has been reached, the wine is chilled, filtered and left to refine in small temperature-controlled stainless steel tanks.

Tasting Notes

Appearance: It shines in the glass with a radiant and luminous golden yellow.

Nose: Intense and multifaceted bouquet, with aromas of ripe apricot and exotic fruits that paint a warm and inviting profile. These are complemented by floral notes of orange blossom and jasmine, so characteristic of Moscato.

Palate: Fine, balanced and with a refreshing vivacity that harmonises masterfully with the natural sweetness. Without requiring barrel ageing or elaborate raisining, it offers astonishing depth and finesse, with a delicate and persistent finish.

A wine of great singularity: a gentle Moscato from southern Lazio, produced from a nearly forgotten variety that the Pandolfo family rescued for the wine world.
