Bodega Manuel Aragón (Chiclana de la Frontera): History, Sea Influence and Aging in the Marco de Jerez
In the heart of the Bay of Cádiz, where Atlantic influence blends with albariza soils and the winemaking tradition of the Marco de Jerez, lies Bodega Manuel Aragón, one of the most distinctive family-owned wineries in Chiclana de la Frontera. Its identity cannot be understood without the landscape that surrounds it: vineyards close to the sea, the Levante and Poniente winds, and a history that dates back to the early 19th century.
History: a 19th-century family legacy
The winery originated in the early 19th century, when Pedro Aragón Morales established a small press and winery in Chiclana. Over generations, the family consolidated its winemaking activity, and in the 20th century moved to its current location, always maintaining its artisanal and family-driven character.
Unlike many larger houses in the Marco de Jerez, Manuel Aragón has preserved a clear philosophy: full control of the entire process, from vineyard to bottling, with special attention to traditional solera systems and the expression of terroir.
Today, it is recognized for its wide range of fortified wines, “vinos de pasto”, and aged reds, standing out as one of the wineries that best reflects the diversity of Cádiz wine today.
Location: between vineyards and the Atlantic
The winery is located in a privileged area within the province of Cádiz:
- Direct influence of the Atlantic Ocean
- Albariza soils, essential for viticulture in the Marco de Jerez
- Mild microclimate that favors both biological and oxidative aging
This environment is essential to understanding its wines: saline, complex, and deeply connected to the land.
Winemaking philosophy
The winery produces different traditional styles from the Marco de Jerez:
- Biological aging (under flor yeast) → finos and amontillados
- Oxidative aging → olorosos and palo cortados
- Vinos de pasto → pure vineyard expression
- Aged red wines → modern reinterpretation of the region
This balance between tradition and modernity has earned the winery recognition in specialized guides, particularly for the quality of its fortified wines.

Bodega Manuel Aragón represents a hybrid model within the Marco de Jerez:
- Absolute respect for traditional solera and criaderas systems
- Modern interpretation through “vinos de pasto” and red wines
- A strong identity deeply rooted in Chiclana de la Frontera and its Atlantic environment
It is a winery where each wine expresses a different facet of the same territory: the sea, the albariza soils, and the patience of time.
