Conde de Aldama Blanco spring sack of MMXXIII
Today we exclusively taste “Conde de Aldama Blanco spring sack of MMXXIII” produced by Bodegas Yuste.
Conde de Aldama Blanco is a still wine of static biological aging. Commonly known as ‘Vinos de pasto’, the base of this wine is a single varietal production of Pedro Ximénez, from the Moriles Altos area (Córdoba), which is subsequently aged under “La flor de Sanlúcar”. It is aged for 8 months and is then ready for bottling.
When it arrives in Sanlúcar it has a 15º alcohol content; and after its aging process, it ends up with a 14.5º alcohol content due to the intensive consumption of ethanol and other alcohols by the yeasts. All this evolution is developed in bocoys of 43 arrobas, or what is the same, 716 liters.
These wines combine two different styles of winemaking, blending the quality of the albariza soils of Cordoba with the aging under the veil of Sánlúcar. The result is a complex white wine, with a lot of unctuousness and presence, which shows the first signs of the aforementioned biological aging. It is an ideal wine both for amateurs of the wines of the Jerez region, who still shy away from the sharp finos and manzanillas, as well as for more experienced palates looking for new sensations.
Let’s move on to the tasting notes:
Visual phase: with a very appetizing initial appearance, it maintains a very faint straw yellow color with golden reflections, it is clean and bright.
Olfactory phase: it has a medium olfactory power. It prints a good combination of aromas of biological aging, along with prominent white flowers. It also allows to find in the background hints of pome fruit.
Tasting phase: the palate is expressive, dense and forceful. It has a powerful entry with a drying point. It is tasty on the tongue and warm in the aftertaste.
It is very long and tasty, deserves after tasting the rating of Excellent, reaching a score of 92 points.
