2018 Maar de Cervera Graciano
2018 Maar de Cervera Graciano is a volcanic wine produced by Encomienda de Cervera.
Today we taste this wine from volcanic soils that is made from vines planted on the ancient volcano Maar de la Hoya, in the region “Campo de Calatrava”, more than 750m above sea level.
With black and reddish soils, rich in very old stones and with a large amount of clay, this soil provides a unique terroir, which added to the care of its producers, offers a select wine of great finesse. Its base is a 100% Graciano varietal, aged for 12 months in oak barrels.
The visual phase shows a bright cherry red color, very high layer and garnet rim. It maintains a dense and persistent tear, which accompanies a clean and bright finish.
The olfactory phase is surprising and complex. It has a medium intensity, high quality and finesse. It offers an aromatic profile of very ripe black fruit, with hints of blueberry and plum jam. It also has a spicy profile, with hints of black pepper, pine, eucalyptus and dried flowers. Finally, vanilla and licorice aromas appear in the background.
The taste phase is very powerful and tasty. It has a very good polyphenolic structure, which provides a very marked passage through the palate. It is unctuous and sweet, leaving an aftertaste of stewed fruit and wood. It retains very good acidity that makes it easy to drink.
It is a product that works very well with grilled red meats, game sausages or a tasting of very strong sheep cheeses.
It offers its full potential after 15 minutes open, although it is always a good option to decant it.
A wine that after tasting deserves the rating of Very Good, reaching a score of 91 points.
