San Cobate 2021 – A Ribera del Duero of Benedictine Origins

San Cobate Finca y Viñedos boasts a history stretching back ten centuries, to when Benedictine monks built a monastery dedicated to Saint Cucuphas and transformed the current vineyards into their kitchen garden and wine estate. Today, the winery sits in the golden triangle of the Ribera del Duero, in Gumiel del Mercado (Burgos), with a vineyard spanning 36 hectares at an altitude of between 830 and 910 metres, with vines planted across a variety of aspects and soil types.

The Wine

San Cobate 2021 is a single-varietal red made from Tinta Fina (Tempranillo) under the D.O. Ribera del Duero. Vinification involves a spontaneous alcoholic fermentation using indigenous yeasts, with no oenological additives. The grapes are vinified in the traditional manner, and the ageing begins in Burgundy oak barrels before finishing in French and Austrian oak vats over 15 years old. In total, the wine spends 16 months in various types of barrel. The use of seasoned wood is key: the toasted notes do not mask the flavours, aromas, or fruit that the wine has naturally achieved.

On the nose, it offers a delicate array of ripe red fruits with a subtle, indulgent quality. On the palate, it is elegant and rounded, with fine tannins that caress the mouth and a freshness that balances its ripeness, leaving a harmonious and vibrant finish.

Sustainability

The harvest is carried out entirely by hand, and the entire vineyard is managed sustainably, with the utmost respect for nature’s cycles. The estate is divided into four clearly distinct plots, where terraces have been constructed in the style of the Douro in Portugal.
